Because panko (Japanese-style bread crumbs) play a supporting role to the main ingredient, the taste of the bread used to make it is designed without strong flavor characteristics.Bread used in meals at home and bread destined to become panko differ in terms of softness, flavor and other such aspects. Standard bread meant for eating contains eggs, butter, margarine, sugars, flavoring agents and/or other auxiliary ingredients mixed in with the main ingredients. Grinding standard bread, making it into panko and using it in deep-fried foods would result in burning of the sugars, melting and mixing in of the butter and flavoring agents, and other such problems that could destroy the flavor of the dish, which is why bread used to make panko contains only the slightest amounts of extra ingredients in addition to the main ingredients of water and flour. The bread used to make our panko is not designed to express its own flavor, but rather to gently blend with the flavors of the main ingredients.
